In a medium saucepan, combine the sugar and water
Bring to a boil over medium heat, stirring constantly to dissolve the sugar
Let it simmer until the syrup reaches a strong thread consistency
Add the coconut and egg yolks, stirring constantly
Cook on low heat until the mixture comes away from the sides of the pan
Remove from heat and spread onto a greased surface
Let it cool and shape into balls
Prepare the caramel by mixing all the ingredients in a saucepan
Bring to a boil over medium heat and cook until the caramel reaches the desired color
Remove from heat and dip each ball into the still warm caramel syrup, then lift out with a fork and drain off excess
Place on a greased surface and let it cool and harden.
