1 descaled and finely chopped coconut
3 cups of sugar

In a saucepan, combine the sugar, water, and coconut and bring to a boil over medium heat
Stir occasionally until it reaches the desired consistency or forms a caramel-like substance
Remove from heat and let cool slightly
(Remove some of the syrup and pour into a bowl with cold water
Remove with your hands
The mixture should form a sticky ball that can be broken apart with your fingers
Scoop out small portions and place in a greased baking dish
Let it cool completely
Shape the edges of the coconut strips and place on parchment paper
Note: Coconut, pre-cut into strips, is available for purchase at party supply stores
To cut it at home, use a vegetable peeler (potato).
