Juice of 2 lemons

4 cloves of garlic, minced
1 cup of dry white wine (240 ml)
2/3 cup of olive oil (160 ml)

2 cups of milk (480 ml)

Soak the hare in lemon juice
Season with salt, thyme, garlic, and white wine
Leave to marinate in a bowl, in the refrigerator, for one day and one night
Then, place in a baking dish with the marinade and drizzle on top the olive oil mixed with onion and milk
Cover with aluminum foil and bake in the oven for 1 hour or until the meat is tender
Remove the aluminum foil and return to the oven until golden brown on both sides
Remove from the oven
Blend the sauce from the baking dish in a blender and serve with pieces of hare
