How to Infuse Vinegar and Olive Oil

    To infuse olive oil and vinegar, use fresh herbs (such as thyme, rosemary or oregano) and one or more garlic cloves, if desired. Thoroughly wash the herbs (the fresher they are, the better) and place them in a sterilized glass jar. Add wine vinegar or olive oil, seal, and let it sit for at least two weeks in a cool place. Shake occasionally, being careful not to spill. Use to season salads and meats, in general.
