Cleaning fish is easy to do. All you need to follow these instructions:
1 - Wash the fish under cold running water, quickly.
2 - Place them on a wooden surface and scrape off scales with a sharp knife (almost vertically), always moving from head to tail.
3 - Cut along the belly of the fish, following its length, and remove the innards and spine.
4 - Remove the gills and fins, cutting the lower part of these.
5 - Except for baked fish, remove the head by making a cut well above the pectoral fin.
6 - Submerge the fish in salted water to remove any remaining blood and residue.
7 - Season according to your preference's recipe.
To know if the fish is in good condition for consumption, check:
1 - The eyes should be swollen, with a shiny and clear surface.
2 - The gills should have a bright color and be well attached to the skin.
3 - The flesh should be firm and, when pressed with your fingers, return to its original shape.
4 - Although all fish have characteristic odors, it's good to know that it should be as mild as possible.
