1 cup grated cheddar cheese, coarse-ground
2 tablespoons wheat flour
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon mustard

Fry the smoked ham until golden and crispy
Drain and chop the slices
Butter mini muffin tin cups and place a pancake in each
Add some smoked ham and top with cheese
Mix together the flour, salt, black pepper, mustard, and eggs
Pour this mixture over the pancakes
Bake in a preheated oven at 170°F (moderate) for 15 to 20 minutes
Let cool for 5 minutes before removing from cups
Garnish with parsley
Make 12 pancakes.
