Brown the fish carcass and head in olive oil for 5 minutes
Add the vegetables and 5 sprigs of parsley
Brown for 10 minutes, stirring occasionally
Add the water and salt
Cover and simmer for 50 minutes over low heat
Remove from heat and strain through a fine-mesh sieve.
