1 - Hold the tentacles firmly and pull out the outer skin from the head and arms, separating them from the head and suckers.
2 - Carefully remove the ink sac (reddish color) from the inside of the tentacles.
3 - Using a sharp knife, cut off the suckers about an inch above the eyes. Remove the entrails and eye parts. Using your fingers, remove the small round cartilage from the base of the tentacles.
4 - From inside the tentacle's hollow, remove the transparent, pen-shaped cartilage.
5 - Remove the arms.
6 - Under running water, gently scrape off the thin red membrane (like peeling an orange) from both the tentacles and head. Turn the head inside out to wash it thoroughly.
