    To achieve great results when frying steaks, follow these steps: Pat dry the steaks with paper towels. Season with salt and pepper. Place butter or margarine in a skillet and heat it over medium heat until the foam starts to disappear. Fry the steaks for about 3-4 minutes per side, adjusting the heat so they don't burn. Flip the steak and fry it on the other side, doing the same. The steak is half-cooked when bubbles of red juice start to appear on top. A steak approximately 2 1/2 cm thick can be cooked for about 3-4 minutes per side for medium cooking. If it's in doubt, make a small incision into the steak. Remove the steaks and place them on a platter. Serve with one of the following sauces:
