500g dried apricots

1 cinnamon stick

3 peeled oranges, sliced into 8mm thick rounds

In a bowl, combine the dried apricots with both types of wine and let it soak for one to two days
Place the mixture into a glazed or non-stick saucepan, add the cinnamon stick, orange zest, and cloves
Bring to a boil, then reduce heat and simmer for 10-15 minutes or until the apricots are tender
Let it cool on its own liquid
Peel the remaining three oranges, remove all white pith, and cut into slices about 8mm thick
Add the sliced oranges to the apricot mixture with orange juice
Mix well
Transfer the mixture to a glass bowl and refrigerate
If desired, serve with Ginger Cake.
