Rinse the apricots well and let them soak for 2 hours in hot water that covers the fruit
Slowly cook, covered, in a pot with enough boiling water to cover the apricots until they're tender
Season to taste with lime juice and ginger
You can also use a dietetic jam in syrup and season with lime juice and ginger
