Mix the mashed yolks with salt, black pepper, nutmeg, and egg, adding enough pastry flour to bind
Form into balls about 1.5 cm in diameter and coat in more pastry flour
Fry in hot vegetable oil until golden brown and serve immediately in a warm consommé
Make about 1 day's worth of fritters
Serve 3 portions.
