1/2 kg of beef bones
1/2 kg of lean beef
3 egg whites
1 handful of fresh parsley (with green onions)
1 onion
2 bell pepper seeds
1/2 sheet of bay leaves
2 sprigs of thyme

2 red bell peppers in brine (optional)

Simmer the beef bones in 2 liters of water for 1 hour
Cut the beef into strips and grind it through a meat grinder, then mix with the egg whites, parsley, green onions, and onion
Let it simmer for another hour in the broth
Strain the broth through a fine-mesh sieve and chill it in the refrigerator until it's well chilled
Serve with red bell peppers in brine, cut into small pieces.
