Beat the cream until it forms stiff peaks
Place the water in a small bowl and sprinkle the gelatin on top
Let it hydrate for a few minutes and then melt it in a double boiler
Beat the egg whites until they form stiff peaks, adding the sugar gradually and continuing to beat until stiff peaks form again
Fold the egg mixture into the cream, then add the dissolved gelatin
Divide the cream into two parts
In one part, add the peppermint extract and mix well
In the other part, sift in the chocolate and mix well
Place the two mixtures into a glass or crystal bowl, forming the desired designs
Refrigerate until serving time
Serve with melted semi-sweet chocolate tablets, portioned out to 20 servings
