Melt the chocolate and temper it (see tip below)
Fill the molds and scrape off excess
Chill in refrigerator until firm
Dismantle
Filling with cupuaçu
In a pan, combine the two ingredients over medium heat and stir until thickened to a gel-like consistency
Let it cool and fill the cups
Filling with white ganache

Heat the cream in a saucepan until it starts to simmer
Add the chocolate and almond extract, stirring until the chocolate melts completely

Let it cool and refrigerate for an hour
Beat the cream in a mixer on medium speed until light and fluffy
Place in a large bag with a large piping tip and fill the cups.
