2 kg of lamb chops
Salt and black pepper
1/2 cup all-purpose flour
3 tablespoons olive oil
1/2 cup thinly sliced onion
2 cloves garlic, minced
24 black olives, pitted
1 1/2 teaspoons grated lime zest
4 sprigs of thyme
1 tablespoon dried oregano
1/4 cup balsamic glaze
1/4 cup dry white or red wine
1 teaspoon ground cayenne pepper

Season the lamb chops with salt, black pepper, and cayenne pepper on all sides

Dredge the lamb chops in flour, shaking off excess

Heat olive oil in a large skillet over medium heat
Add the lamb chops and cook for 4 minutes

Flip the lamb chops and add the onion, olives, garlic, lime zest, and thyme
Cook, stirring occasionally, until the onion is tender, about 3 minutes

Add the oregano and cook for 1 minute

Increase heat and add the balsamic glaze and wine
Stir to deglaze the pan

Flip the lamb chops one more time and cook for 1 minute

Transfer the lamb chops to four plates, spoon some of the sauce over the top, and garnish with a sprig of thyme.
