1/4 cup of chopped fresh cilantro
1 1/2 kg of fresh pork ribs, whole

In a blender, combine the salt, thyme, vinegar, soy sauce, onion, garlic, oregano, parsley, black pepper, and cilantro to obtain a homogeneous marinade
In a large bowl, pour the marinade over the meat and let it marinate for 30 minutes
Transfer the meat and marinade to a roasting pan and cover with aluminum foil
Place in a moderate oven (180°C), preheated, for one hour and 30 minutes
Remove the foil and let it cook for an additional 40 minutes or until golden brown
Garnish with fresh cilantro leaves and serve.
