Remove excess fat from the pork ribs
Cut them into bite-sized pieces and place in a large pot
Add salt, black pepper, crushed garlic, and 1 cup of water
Cover and cook over low heat, stirring occasionally until the meat is tender (approximately 45 minutes)
Remove the pork ribs, drain excess fat, and add the cassava pieces to the same pot
Add another cup of water and cook until the cassava is tender (approximately 15 minutes)
Return the pork ribs, reheat, and adjust seasoning as needed
Serve immediately
