Season the beef ribs with vinegar, onion, garlic, salt, and pepper
Brown the oil in a large Dutch oven
Add the beef ribs and cook until browned on all sides
Cook at medium heat until the meat is tender, adding a little water if necessary to prevent burning the bottom of the pot and leaving some broth at the end of cooking
Transfer the meat to a baking dish, intermingling it with whole bananas (without peels)
Baste the mixture with the remaining broth and place it in a hot oven (250°C), preheated
Cook until golden brown
Dust with fresh parsley and serve with rice.
