Lightly sprinkle the pork chops with pepper
Place them in a moderate-temperature oven-safe dish, greased lightly, cover with aluminum foil, and let it cook for 30 minutes
While that's cooking, strain the peach juice from the can into a saucepan, add beef extract and onion, and bring to a boil without a lid until the sauce has reduced to half a cup
Stick cinnamon slices into the peaches
Remove the aluminum foil and place the peaches around the pork chops
Brush with the sauce and bake uncovered for an additional 25 minutes
Serve 3 to 4 servings.
