Make a horizontal incision in each pork cutlet, forming a pocket
Cut the emmental cheese into strips and divide into four portions
Wrap each portion of cheese in a slice of ham
Place inside the pork cutlets' pockets
Beat the edges with a meat mallet to seal the pocket well
Season with salt and black pepper
Coat with wheat flour, eggs, and breadcrumbs
Melt butter in a large frying pan and fry the pork cutlets over low heat until golden brown on both sides
Serve with lettuce and tomato salad.
