Remove the stems from the kale and chop the leaves into pieces
Set aside
Boil the sausages for 3 minutes, then peel them
Set aside
Fry the onion in olive oil until golden brown
Add the chopped sausage, mustard, and stir-fry for 3 minutes
Remove from heat, add kale and season with salt to taste
Mix well and place in a low-refrigerator dish
Make 4 impressions and crack an egg into each one
Sprinkle with paprika, cover with aluminum foil and bake at moderate heat (180°C) for 20 minutes or until the yolks and whites are set
