Wash the kale, place it in a pot, cover and cook until tender
Melt the butter or margarine in a pan, add flour, salt, and pepper to taste
Add the milk gradually
Cook, stirring constantly, until the sauce thickens and simmers
Add the cheese and mustard, heat until the cheese melts
Place the kale on a serving dish, spoon some of the sauce over it and sprinkle with parsley
Serve the remaining sauce separately
