Chicory
2 cups of milk
1/4 cup of wheat flour
3 spoons of unsalted butter
2 spoons of vinegar
1/2 spoon of allspice
1/2 spoon of pepper sauce
1 medium onion, finely chopped
600g of chicory
Covering
1/4 cup of butter
2 spoons of oregano
8 croutons, crushed
2 cloves of garlic, minced

Cook the chicory with 1 spoon of vinegar until it becomes soft
Squeeze and reserve
In a pan, fry the onion in butter for 1 minute, stirring
Add the flour and stir until golden brown
Add the allspice, pepper sauce, and milk
Stir and let thicken. Reserve
Covering
In a skillet, fry the garlic in butter for 2 minutes, until golden brown
Add the oregano and mix
Tear off from the heat, add the croutons, and mix to form breadcrumbs
Assembling
In a dish, place the chicory and drizzle with the remaining vinegar
Cover with the reserved sauce and sprinkle breadcrumbs on top
Serve immediately.
