Preheat the oven to 350°F (medium)
Grease a 20 cm x 30 cm baking dish with olive oil. Reserve
Separate the spinach leaves, chop and reserve
In a large skillet, heat the olive oil over medium heat and sauté the chopped green onions for about 1 minute
Add the reserved spinach and cook until tender (about 2 minutes)
Remove from heat, add parsley and chives and stir. Reserve
In a large bowl, beat the eggs with an electric mixer until well combined
Add the cream mixed with lemon juice, grated cheddar cheese, reserved spinach mixture, salt, and black pepper and stir
Transfer to the prepared baking dish and sprinkle with Parmesan cheese
Bake in the preheated oven until firm (about 25 minutes)
Cut into eight pieces, arrange on a plate, and serve
