1 medium kale stem
1 cup of vinegar
1 cup of water
1/2 onion, cut into half rings
3 tablespoons of chopped parsley
3 tablespoons of olive oil
1 tablespoon of freshly squeezed lemon juice
1 tablespoon of minced fresh chili pepper
1 tablespoon of chopped green onions
to taste salt and black pepper

Wash and separate the kale into leaves
In a large pot, cook the kale in some boiling water with salt for 10 to 15 minutes
Drain and place the cooked kale in a container with a lid
In another pot, combine vinegar, water, onion, and parsley
Bring to a boil
Pour the hot vinegar mixture over the kale
Cover and refrigerate until ready to serve
Just before serving, drain the excess liquid and mix in the remaining ingredients
Serve the kale topped with the dressing.
