Finely chop the bacon and smoked pork rind
Soak in hot water to remove excess salt
Then, fry until crispy
Mince the black bean and add it to the pan
Add the paprika, garlic, and onion powder
Cook for about 10 minutes. Reserve
Massa
Purée the cooked black beans with the seasonings in a blender until smooth
Add the onion cream and blend well
Gradually add the cassava flour moistened with 150ml of cold water, butter, and all-purpose flour
Blend until it forms a creamy paste that doesn't stick to the sides of the pan when you scrape it with a spoon
Remove from heat and let cool
Then, gradually add the biscuit flour
Mix well
Mold the fritters by wetting your hands in cold water before working with the dough
Fry in hot oil.
