1 small avocado

Cook the avocado until it's soft
Blend the pulp in a blender to form a puree and reserve 3/4 cup
In a saucepan, combine heavy cream, whipped cream, unsalted butter, cinnamon stick, and spices mixed
Bring to medium heat and cook without boiling for 5 minutes
Remove from heat, let cool, and refrigerate for 30 minutes
Discard the cinnamon stick and transfer to a stand mixer
Beat at medium speed and add egg yolks
Continue beating until smooth
Add the avocado puree and beat some more
Strain through a fine-mesh sieve and portion into individual ramekins greased
Bake in a water bath for approximately 30 minutes or until firm around the edges and creamy at the center
Let cool, refrigerate overnight, and dust with unsalted butter before serving
Serve warm or at room temperature.
