In a medium saucepan, combine the cornstarch and sugar
Add the milk gradually, stirring constantly until smooth
Add the eggs and stir again
Cook over high heat, stirring constantly until thickened (approximately 4 minutes)
Transfer to a blender bowl
Add the heavy cream and vanilla and blend at medium speed until smooth
Transfer to a serving dish and reserve
Prepare the caramel: In a small saucepan, melt the sugar over high heat, stirring constantly until caramelized (approximately 3 minutes)
Spread the caramel with a spoon over the cream
Serve immediately
