In a heatproof bowl, melt the chocolate over simmering water
Make sure the bowl is just above the boiling water, without touching the bottom
If preferred, melt the chocolate in the microwave on high for 30 seconds to 1 minute
Stir until smooth and let cool
In a stand mixer, beat the whipped cream with sugar until stiff peaks form

In another bowl, mix the wine and milk, dip two English biscuits at a time and place them in one of the dishes on top of the creme, with one biscuit leaning over the other
Use some reserved creme to stick one biscuit to another
Do the same with the rest of the biscuits
Using the piping bag, create chocolate strips over the biscuits, like a cat's bed
Garnish each dish with almond slices or a hazelnut
