In a medium saucepan, combine the milk, heavy cream, cinnamon stick, and chocolate
Let it melt over low heat
Remove the cinnamon stick and add the vanilla extract

In a separate bowl, whisk together the egg yolks and cornstarch
Add to the chocolate mixture
Pour into small molds and place in a water bath at 180°F (82°C) for 45 minutes or until firm and foamy
Let it cool, cover, and refrigerate to chill
Serve.
