Whisk the egg whites until stiff and add the guava paste, broken down without adding water, over low heat, stirring always
Spread the mixture into a caramelized pudding mold greased with butter
Cook in a water bath
Remove from the mold still warm
To make the sauce, combine all ingredients in a pan, cook over low heat and stir until thickened
Pour over the pudding.
