Cut the sweet potatoes into 1 cm thick slices and soak them in a mixture of water and lemon juice to prevent browning
Simmer them over low heat until they become slightly tender
Drain excess liquid
In another pan, combine the water, lemon zest, and sugar, and bring to a boil until the sugar dissolves
Add the sweet potato slices and simmer in low heat until the syrup begins to thicken
Remove each slice with a fork and arrange them on a lightly oiled surface so they don't stick together
After the exposed side becomes dry, flip and let the other side air-dry as well
Serve immediately or store in an airtight container
