Dissolve the gelatin in boiling water
Combine the orange juice and zest
Chill in the refrigerator until it thickens slightly
Add the cream and mix carefully
Pour into a round mold with a hole in the center, lightly greased with butter, 18 cm in diameter by 8 1/2 cm high
Chill in the refrigerator until firm
