Melt the chocolate with the cream (or sorbet) and let it cool

Whip the egg whites until frothy and add 5 tablespoons of sugar
Reserve. Reserve

Beat the yolks with 5 tablespoons of sugar until the mixture is pale yellow and smooth

Mix the chocolate with the yolks, then gently fold in the whipped egg whites
Add garnishes and refrigerate.
