16 egg whites
2 cups granulated sugar
1 1/2 cups lemon juice
Zest of 2 lemons (white part only), grated or coarsely chopped
1 1/2 cups unsalted butter, melted
2 cups heavy cream, fresh or canned (with no whey)
Fresh fruits: strawberries, pineapple slices, banana slices, melon, grapes with seeds

Whisk together the egg whites, sugar, lemon juice, and zest over a simmering water bath
Beat with an electric whisk or wooden spoon until light and fluffy
Remove from heat and gradually add the melted butter, beating with a fork or electric whisk
Let cool
If using fresh heavy cream, beat until slightly thickened
Gently fold into the lemon cream
Serve in a bowl surrounded by fruits
Each guest takes a small amount of cream over their preferred fruit
Use about 6 cups of cream.
