Dissolve the gelatin in 3 tablespoons of cold water
Bate the egg yolks with the lime juice over a double boiler until pale and thickened
Add the desired amount of sweetener, whisking constantly
Melt the gelatin mixture
Continue whisking until slightly thickened
Let cool
Beat the egg whites in a separate bowl until stiff peaks form
Gradually add the sugar to the egg whites while whisking constantly
Combine the egg whites with the cooled gelatin mixture
Pour into individual serving cups and refrigerate until chilled
