1 1/2 cups of sugar
5 tablespoons of cornstarch
1 1/2 cups of water
1 tablespoon of grated lime zest
1/3 cup of lime juice or to taste
5 egg yolks, beaten
4 tablespoons of butter or margarine

Melt the sugar and cornstarch in a heatproof bowl
Add the water, lime zest, and lime juice
Microwave on high for 5-7 minutes, stirring every 2 minutes, until thickened
Remove some of the hot mixture and whisk in the beaten egg yolks
Return everything to the microwave and cook on medium for 1-2 minutes, or until the eggs are cooked
Add the butter and whisk until melted
Let cool slightly and transfer to a decorative bowl or individual serving dishes
Refrigerate until serving
If desired, garnish with a cherry maraschino.
