1 small cabbage
2 cups of boiling water
2 tablespoons of butter
1 tablespoon of grated onion
2 tablespoons of all-purpose flour
1 teaspoon of salt
1 pinch of pepper
2 cups of milk

Chop the cabbage finely
Add the boiling water and cook until it's tender
Purée the cabbage in a blender or food processor, then return it to the liquid
Melt the butter, add the onion, and cook slowly for 3 minutes
Add the flour, salt, and pepper
Gradually add the milk while stirring constantly
Cook, then serve hot, garnished with cheese balls (see accompaniment recipe for soup)
Serves 6.
