Mix the all-purpose flour in a bowl, add the salt
A little at a time, add the milk, stirring with a wooden spoon to create a smooth batter without lumps
Break one egg at a time over this mixture, mixing well to combine, creating a very homogeneous mixture
Let it rest for several hours
Place small portions of dough in the hot skillet without greasing
Make thin crepes, flip and let cook on the other side, reserve while preparing the filling:
Filling: 1/2 cup of Camembert cheese (comes in round paper boxes), 1 cup of white sauce, prepared with 1 cup of milk, 1 tablespoon of butter, 1 tablespoon of all-purpose flour, and to taste
Mix well the Camembert, mashed with a fork, with the white sauce
Season well with pepper
Place a spoonful of this cream over each crepe and roll up
Place in a refrigerator-safe dish, cover with tomato sauce and sprinkle with grated cheese
Bake in the oven to gratinate and warm very well.
