    To make crepes suzette, a dessert that puts on a show at the end of your dinner, you'll need to start with your favorite pancake recipe: see the recipe below. Fold the pancake in half. Turn it back and forth while keeping it warm in a water bath, as you prepare the sauce with the following ingredients: 1/2 cup granulated sugar (or 6 cubes), 1 orange, 1 lemon, 1/3 cup orange juice, 1/2 cup butter (or margarine), 2 tablespoons grated orange zest, 1/4 cup Cointreau liqueur, 2 tablespoons rum, and 1/3 cup cognac. Take the orange peel off and rub it on the sugar. In the sugar mixture, add the orange juice and stir until the sugar dissolves. In a skillet, melt the butter. Add the orange juice mixture and also the grated orange zest. Heat it up and place the folded pancakes in the sauce until they're well coated. In a bowl, mix together Cointreau and rum. Pour over the pancakes. Now, prepare for the grand finale: pour the cognac over the pancakes and use a blowtorch to make them flame. Serve like this, flambΓ©ed. Serves 10 people, makes 10 crepes suzette.
