Grease a large sheet of parchment paper with butter and reserve
In a saucepan, mix together the sugar and corn syrup and bring to medium heat, stirring occasionally, for 10 minutes or until a dark caramel forms
Add the peanuts and stir well
Remove from heat, add baking soda and stir quickly
Pour onto the prepared parchment paper and spread
When cooled, remove the parchment paper and place the confection on a wooden cutting board
Use a mallet to break it into irregular pieces.
