1 tomato, peeled and seeded, finely chopped
0.5 kg beef mince
Salt and black pepper to taste
2 tablespoons all-purpose flour
0.25 cup milk
3 tablespoons chopped fresh parsley
30 green pitted olives
0.25 cup breadcrumbs
Oil for frying

In a pan, melt the butter and sauté the onion until golden brown
Add the tomato and cook until the beef is tender
Season with salt and black pepper
Add the flour dissolved in milk and mix until the beef is well separated from the pan
Remove from heat and add parsley
Let it cool, shape into patties, and fill each one with a pitted olive
Coat each patty in breadcrumbs
Heat oil and fry the fritters until golden brown.
