Mix the breadcrumbs, pecans, and warm milk
Cook over low heat, stirring constantly until thickened slightly
Remove from heat
Add the egg yolks one at a time, alternating with the sweet potatoes
Season to taste with salt and black pepper
Beat well, spread on a plate and let cool
Shape into croquettes, coat in flour, eggs, and again in flour
Fry in hot oil until golden brown
Yield 27 croquettes.
