Roll out 1/3 of the potato and cheese dough onto a piece of parchment paper sprinkled with flour to form a 25 x 25cm square
Cut in half
On one half, sprinkle 1 tablespoon of thyme
Place the cheese cubes on top
Cover with the other half of the dough, removing the parchment paper
Gently press the rolled macaroni to compress slightly
Place on a baking sheet lined with parchment paper
Cut in half again and cut each piece into strips 1cm wide but not too thin (don't separate)
Mix the egg yolk with milk and brush the dough
Sprinkle with thyme and bake in a preheated oven (200°C) for about 25 minutes
Remove from the oven and reinforce the cuts to separate the biscuits
Bake for an additional 5 minutes to brown the edges
Yield: 26 shortbread cookies.
