3 hard-boiled and chopped eggs
3 tablespoons of finely chopped green pepper
1 tablespoon of finely chopped onion
1 minced garlic clove
1 tablespoon of finely chopped red bell pepper
2 tablespoons of butter or margarine, or olive oil
2 tablespoons of sweet pickle relish
salt and black pepper to taste
2 tablespoons of shredded cheddar cheese
6 hot dog buns
3 hard-boiled and chopped eggs
3 tablespoons of finely chopped green pepper

6 hot dog buns
Mix all ingredients well, except for the hot dog buns
Remove the egg yolks from the hot dog buns and fill them with the egg mixture
Wrap each hot dog bun in aluminum foil and bake at 400°F (200°C) for about 8 minutes
Serve 6 times
Note: This filling can be made ahead of time and stored in the refrigerator until baking.
