Peel the potatoes and cover with water
Let them rest for ten minutes
Drain, wrap in aluminum foil, and bake until soft
Remove from oven, unwrap, and mash the potato with a fork
Add butter, egg yolks, salt, and pepper

Mix well, spread the dough in a greased baking dish, and let it cool
Shape the croquettes with floured hands
Dip them first in wheat flour, then beaten eggs, and finally cake flour
Fry them slowly in hot oil
Drain on paper towels and serve with mustard or ketchup.
