Peel the sweet potatoes and cover them with water
Let them rest for ten minutes
Drain, wrap in aluminum foil, and bake
Bake until soft
Remove from oven, unwrap, and mash the sweet potato with a fork
Add butter and beaten egg yolks
Season with salt and black pepper

Shape the croquettes with floured hands
Dip them first in all-purpose flour, then in the beaten egg, and finally in breadcrumbs
Fry them gradually in hot oil
