4 large or 6 medium sweet potatoes, cooked

Mash the sweet potatoes
Should have about 3 to 4 cups of puree
Beat in the hot milk, butter, egg yolks, onion, salt, pepper, and nutmeg
Spread the mixture onto a flat dish and refrigerate until cold
When well chilled, shape into small croquettes
Coat with biscuit crumbs, lightly beaten eggs, and again with biscuit crumbs
Fry in plenty of oil or fat for several minutes, until golden brown
Drain on paper towels
Serve warm.
