2 cups (about 1 lb) of beef scraps (make use of leftovers)
3 small cooked and mashed potatoes
1/2 cup (about 4 oz) of leftover beef broth or beef stock
1 tablespoon of chopped fresh parsley
3 eggs
Salt and black pepper to taste
2 cups of all-purpose flour
Oil for frying

Chop the beef finely and reserve the broth
Mix well the ground beef with potato, broth, parsley, and one egg
Season with salt and black pepper
Beat the remaining eggs lightly and reserve
Prepare a plate with all-purpose flour
Shape the croquettes using a spoonful of the prepared mixture
Coat in beaten eggs and then roll in flour
Repeat the process until all the dough is used up
In a small frying pan with a high edge, heat about 1/2 inch of oil and fry the croquettes, gradually, until they are golden brown
